4 large eggs
4 thick slices artisan bread or similar
4 slices fresh mozzarella cheese
1/2 cup freshly grated parmesan cheese
1/2 small onion, finely chopped
1/2 cup cherry tomatoes, cut in half
2 tablespoons fresh basil
2 tablespoons Italian parsley
4 tablespoons water
1 teaspoon butter
In a large frying pan, coat the bottom with 1 teaspoon of butter on medium heat to melt. When the pan is hot, add onions and cook until soft.
In a small mixing bowl, whisk eggs briskly with water. Add tomatoes, fresh herbs and parmesan cheese. Season with salt and black pepper and pour into the pan. Scramble for 2-3 minutes or until cooked.
Toast or grill fresh bread (butter optional). Arrange on a serving platter (refer to picture) and enjoy.
