Roasted Pepper Mozzarella Salad
3 large roasted red peppers, cut into strips
1 pound fresh mozzarella ball, cut into discs
1/2 small white onion, cut into strips
4 cups baby spinach
Extra virgin olive oil
Balsamic vinaigrette
Sea salt and black pepper
Toss spinach in 1 tablespoon of oil and balsamic to combine. Season with sea salt and black pepper. Arrange the rest of the salad ingredients over the top. Just before serving drizzle oil and balsamic vinegar over the top of the salad. Season with sea salt and black pepper.
