This summer we've been devouring tomatoes and have tried many different ways of preparing them.
Perhaps our favourite way of late has been to cut a tomato in half (horizontally), place 1-2 freshly picked basil leaves on each half, sprinkle a few large shavings of parmesan cheese on each, and then simply microwave or broil them briefly (so they are warmed through but not mushy). YUM. This week our family of five has probably eaten about 15-18 tomatoes in this manner already.
